Baked Goat Cheese with Marinara

Ahh – March Madness,  I love you!  You guys… my University of Minnesota Golden Gophers danced all the way to to a 5 seed this year!  To say I’m excited is an understatement.  While it’s true I live deep in Badger country (Gopher fan friends question my sanity, Badger fan friends TRY to tolerate me), I bleed maroon and gold.  Badger fan friends have reminded me that the Gophers against 12th ranked Middle Tennessee has upset written all over it, but I’m all in.  I can’t wait for the game!

One of the best parts of March Madness (besides some epic basketball matchups, of course) is delicious finger foods.  That’s how this crispy on top, gooey in the middle baked brie was born.  I served with a fresh baked baguette, but crackers, pretzels, or fresh veggies would also work well.

Baked Goat Cheese with Marinara

Serves: 6 Cooking Time: 30 minutes

Ingredients

  • 8 oz chevre goat cheese, softened
  • 1 cup marinara sauce
  • chopped fresh herbs to taste (I used basil, parsley, and oregano)
  • Optional:
  • I mixed in 2 tablespoons of roughly chopped capers for a salty punch. The cool thing about this recipe is you could mix in just about anything. Olives, herbs, garlic, parmesan cheese, tomatoes... the list goes on!

Instructions

Preheat the oven to 400 degrees.

Combine chevre goat cheese with any optional ingredients you want to add (see optional note above).

Press chevre goat cheese into a ball and press edges down slightly so it sticks to your pie plate.

Pour marinara sauce around the cheese ball.

Bake in the oven for 30 minutes or until top of dish is bubbly and cheese is slightly browned.

Remove from oven and sprinkle with fresh chopped herbs.

Serve with dippers.
