Creole Cajun Shrimp

Who likes spicy food?  If so, this is the dish for you! Creole Cajun shrimp deliciousness from kitchen to table in no time flat.

I’ve been trying to post a recipe every Tuesday and Thursday, but yesterday got away from me.  A full day of work plus errands and a climbing gym date with one of my bests left me one tired Beth.  I was out for the count by 9:30.  9:30!  For those that know me, I’m a night owl (probably due to the copious amounts of caffeine I drink) but sometimes, you just need to listen to your body and give it a rest, gosh darn it! 🙂

ANYWAY, you’re here for the FOOD, not a diatribe about my routine lack of sleep.  🙂

Because yesterday was Fat Tuesday (and there is no better way to celebrate a Cajun holiday without some delicious Cajun food) I created Creole Cajun Shrimp, incorporating, of course, the holy trinity of vegetables (green pepper, onion, and celery) and some crispy corn bread on the side.  Although my hubby and I love spicy food, this dish can be adjusted to fit your spice tolerance.  Serve with steamed rice or grits to complete your meal.

Cajun Creole Shrimp

Serves: 6 Cooking Time: 1 hour

Ingredients

  • 2 teaspoons olive oil
  • 1/2 cup green pepper, chopped
  • 1/2 cup sweet onion, chopped
  • 1/2 cup celery, chopped
  • 2 cloves garlic, minced
  • 28 oz can diced tomatoes
  • 8 oz can tomato sauce
  • 1 tablespoon creole seasoning (I used Old Bay)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons hot sauce to taste (I used Frank's)
  • Salt and pepper to taste
  • 1 1/2 pounds of medium to large (31-40/lb range) cleaned, peeled shrimp (raw preferred)
  • thinly sliced green onion for garnish, optional

Instructions

Heat oil over medium heat. Add green pepper, onion, celery, and garlic. Saute until softened and onion is translucent. Salt and pepper to taste.

Add tomatoes, sauce, seasoning, Worcestershire, and hot sauce. Bring to a boil and the lower heat to a simmer.

Simmer for 20-30 minutes until sauce starts to slightly thicken. Salt and pepper to taste.

Add shrimp. If using raw shrimp, cook until shrimp turn pink (about 5-10 minutes). If using already cooked shrimp, cook until shrimp are heated through (about 5 minutes).

Add salt, pepper, and extra hot sauce to taste.

Serve over fresh steamed rice or grits. Sprinkle with thinly sliced green onion for garnish if desired.
